Cassoulet french style bean stew i did it for a special order the recipe
1 onion
6 romana tomatoes
2 carrots medium size
4 garlic cloves
200 g pork fat
1 kg of white navy beans
2 shredded duck confits
500 ml of veggie broth
1 bunch of thym
4 smoked pork chopped
200 g of garlic sausages
soak the bean in water over night
finely chopped the onion cut the tomatoes in 4 cubed the carrots
in a sauce pan add the pork fat when melted add all the veggie cover the pan and cook until you have a nice tomatoes sauce
add the garlic the veggie broth the thym the beans and the meat
cooked it slowly for 2 hours
et voila you can pan fried 8 sausages "toulouse" aside
enjoy with a bordeaux !
