In France every village are his own recipe in north of France we add raisin and brown sugar !
It's so delicious
A basic recipe is pork blood cream salt white pepper and herbs (thym fresh parsley)
Traditionally we serve the boudin with an apple compote mashed potatoes and a glass of cider
In the french caribbean island they add some hot pepper flakes to the boudin and they served it with a mangoes compote and plantain
