I make my mom leek pie with an old northern of France dough recipe I love tradition ,old recipes and taking time to do it
The flamique dough
In a bowl add 2 eggs 200 ml of warm water 10 g of yeast 200 g of melted butter mix well with a fork
gradually add the flour until you have a dough with a good consistency let rest for 1 hour
cut 3 leeks boiled it
strain it add 250 ml cream 2 eggs salt pepper mix everything
roll the dough in a pie dish add the leeks and cover it with the dough
bake it for 40 minutes at 360F
served with a salad maison or roasted potatoes and red cabbage
Comfort food for hard time
