Quince ratafia




 It's a liquor I do every year from our family tradition 

We need to keep some traditions alive this one is from the village in northern of France 

Clean some quince 4 kg cut it in wedges and ground it using a meat grinder 

Store in cooler for 3 weeks they will fermented 

After 3 weeks strains the fruits and stop the fermentation with an eau de vie I used a vodka 

add the liquor in bottle and wait christmas to drink it 

Offer it or enjoy it chill at the aperitif
